Banana Oat Protein Pancakes


With it being Shrove Tuesday today, it only felt right to share these amazingly fluffy protein banana and oat pancakes. Topped with melted chocolate, greek yoghurt and strawberries they really are a delicious, indulgent way to start the day!


Also, with 55g of carbs and 25g of protein (minus toppings), these pancakes make a great post workout meal.


** Disclaimer: these pancakes do have contain protein powder and would often be seen as a "healthier" option, but please just enjoy your pancakes however you like them!!






Ingredients:

(Serves 1)

- 1 small ripe banana

- 40g oats

- 1 egg

- 1/2 scoop protein powder (I used chocolate)

- 120ml milk

- 1 tsp baking powder - this is the trick to get them fluffy!

- 5g honey or 1tsp of vanilla extract

- Your favourite toppings to serve (I use melted chocolate mixed with some water, strawberries and greek yoghurt)


Method:

- Put all ingredients into a blender

- Blitz until smooth

- Heat a small amount of olive oil or butter in a frying pan

- Add the batter into the pan in batches

- Cook for a minute or so each side (flip when bubbles start to form on top of the pancake)

- Stack your pancakes, top with your favourite toppings and enjoy!
